Vlašić-Käse
A brined sheep's-milk cheese from the high pasture, sold by the slab in the bazaar.
Made from sheep's milk on the mountain and matured in brine, it is firm, salty and nothing like the industrial white cheeses it gets compared to.
Buy it in the čaršija and ask to taste before you commit — quality varies by producer, and the sellers expect the question.
It travels: wrapped well it will survive a flight home, which is more than can be said for most souvenirs.
